This study determined the proximate composition of African breadfruit seeds (Treculiaafricana) used in our local menu using a standard analytical method. The nutritional properties were evaluated in realizing its food value. The seed contained 35% moisture,17.37% crude protein,12.73% fat,5.7% ash,3.0% fiber and 26.2% carbohydrate. This showed that African breadfruit seeds were rich in carbohydrates and protein, though the moisture content was higher than other parameters studied and should be reduced before storage to avoid spoilage. The study also showed that African breadfruit is good for diabetics and anaemic people suffering protein deficiency. It is relatively low in ash and crude fiber which indicates that it's a source of minerals.
